Bone-In Leg of Lamb - Rancher’s Recipe

Instructions

  1. Thaw leg of lamb
  2. Preheat oven to 450 degrees
  3. Using a sharp knife, make multiple slits into leg and insert thin pieces of garlic
  4. Rub leg with olive oil and oregano, rosemary and black pepper
  5. Put lamb in roasting pan uncovered with 2” of beef au jus at the bottom for 30 minutes
  6. Reduce temperature to 325 and cover, cook until internal temperature is 125 degrees
  7. Take out of the oven and remove lid
  8. Let the meat rest for at least 10 minutes, then slice, serve and enjoy
