  1. Remove the stems and seed from Red Chile Pods
  2. Add olive oil to a large pan over medium heat. Add in chiles, onion, and garlic. Saute for 5 to 10 minutes or until fragrant. Pour in water, salt, and oregano, stirring well.
  3. Bring to boil
  4. Cover then reduce heat to simmer for 10 minutes
  5. Sear 4lb of Pork Shoulder Roast or Pork Stew Meat
  6. Add pork into Red Chile
  7. Bring to boil
  8. Cover and refrigerate for 12 hours
