Prime Rib - Rancher’s Recipe

Instructions

  1. Thaw
  2. 4 days prior to cooking leave it uncovered in fridge
  3. Each day pat dry meat on all sides and turn over
  4. 4 hours before cooking take it out and rub with olive oil, garlic, pepper, and a little bit of kosher salt.
  5. Place Prime Rib in roasting pan on rack
  6. Add water to fill the pan just below the rack
  7. Preheat oven to 450°
  8. Put Prime Rib in oven uncovered for 30 minutes
  9. Turn oven down to 325°
  10. Cover Prime Rib for 40 minutes
  11. Pull Prime Rib out and check it by cutting into it or using a meat thermometer. The Prime Rib should be medium rare.
  12. If you want your meat more well done slice the Prime Rib and put it in the Au Ju sauce without the rack.
