Instructions
Defrost
Wash it off
Air dry on a plate in the fridge for 4 days
Each morning and night pick up the piece of meat and dry the plate with a towel and turn meat over
1 tablespoon of Olive Oil – rub on top and bottom of rack
Season with salt, pepper, garlic powder, and oregano to your liking
Lightly season
Put on hot grill, sear both sides for 3 minutes or until nice and brown (6 to 7 minutes total)
Move away from fire into indirect heat on grill
Shut grill lid for 8 – 10 minutes
Cut the rack to check if the meat is medium rare
Take if off the grill and let is rest on a plate for 5 minutes
