Rack of Lamb - Rancher’s Recipe

Instructions

  1. Defrost
  2. Wash it off
  3. Air dry on a plate in the fridge for 4 days
  4. Each morning and night pick up the piece of meat and dry the plate with a towel and turn meat over
  5. 1 tablespoon of Olive Oil – rub on top and bottom of rack
  6. Season with salt, pepper, garlic powder, and oregano to your liking
  7. Lightly season
  8. Put on hot grill, sear both sides for 3 minutes or until nice and brown (6 to 7 minutes total)
  9. Move away from fire into indirect heat on grill
  10. Shut grill lid for 8 – 10 minutes
  11. Cut the rack to check if the meat is medium rare
  12. Take if off the grill and let is rest on a plate for 5 minutes
  13. Enjoy
