Veal Green Chile Stew - Private Chef Stephen Ormsby's Recipe

  1. Heat olive oil in stock pot over high heat
  2. Sear veal stew meat in heated pot until well browned
  3. Remove meat from pot set aside. Remove any excess fat if necessary
  4. Add butter to stock pot and heat on medium-low
  5. Add diced celery, carrots, onions, garlic, and green chile, salt and pepper
  6. Sweat vegetables until translucent
  7. Turn heat to high and stir veal meat back into pot
  8. Add veal stock to pot and bring to a boil
  9. Reduce heat to a simmer and simmer for 1 hour stirring occasionally
  10. After 1 hour add corn and sweet potatoes
  11. Simmer for approximately 30 more minutes, or more if potatoes are not tender
