Veal Rib Roast - Rancher’s Recipe

Instructions

  1. Defrost
  2. Wash it off
  3. Air dry on a plate in the fridge for 4 days
  4. Each morning and night pick up the piece of meat and dry the plate with a towel and turn meat over
  5. Put olive oil on your fingers and rub onto the entire roast
  6. Lightly season entire roast with salt, pepper, and garlic powder
  7. Put on hot grill, sear both sides for 3 or 4 minutes until each side brownness is uniform
  8. Move to indirect heat for 25 to 30 minutes, check after 20 minutes
  9. Suggested doneness medium rare
  10. Cut the rack to check if the meat is medium rare
  11. Pair with Risotto Bellino
